After three minutes, turn off the heat and let it sit for another five minutes until the octopus is cooked. Then soak it in cold boiled water. Remove it from the water and cook with green and red bell peppers (about the same size as the octopus). Mix in scallions, ginger, garlic, sugar, vinegar, and soy sauce. It tastes even better chilled.

- this is so convenient to cook since it is already de-beaked. i thawed overnight and simmered it for around 25 minutes, it’s mildly chewy but not rubbery. would purchase again even full priced since it is so convenient.
