Picanha is delicious. Season the beef with salt and pepper and refrigerate for at least 24 hours. Sear the fat side for 2 minutes without oil, searing both sides for about 2 minutes each, until slightly seared, then place in a preheated oven at 325F for 30 minutes. Perfect!
