I used these dried guajillo chiles for my tamal red sauce and for my red pozole. The dried chiles are always fresh and delicious. I made chicken tamales, beef tamales, and pork pozole. These chiles give my red sauce a deep smokey flavor.

This is ancho chile, it only has two chiles and when I touch them they feel very dry, they feel very hard. I understand that when they feel like this it's because they are very old, but well I hope they have a good flavor.
