Spicy Grilled Head-On Shrimp (Bangladeshi Style)

Clean the shrimp: Rinse thoroughly. You can devein while keeping the heads and shells on for maximum flavor.
Marinate: In a bowl, mix mustard oil, garlic paste, ginger paste, chili powder, turmeric, cumin, lemon juice, and salt. Rub the marinade generously over the shrimp. Let it rest for 30–60 minutes in the fridge.
Grill: Heat a grill or grill pan over medium-high heat. Lightly oil the surface. Grill shrimp for 3–4 minutes per side, until the shells are charred and the flesh is opaque and juicy.
Serve: Arrange on a platter, sprinkle with chopped cilantro, and serve with lemon wedges. Pairs beautifully with steamed rice or flatbreads.
