Storage: keep frozen at 0°F (-18°C) or below. Thaw overnight in the refrigerator, rinse, and pat completely dry before cooking. Do not refreeze after thawing. Cook thoroughly until the flesh is opaque and flakes easily.

Rinse the thawed fish and pat dry. Score both sides 3–4 times and rub with 1 tsp salt and 1 tbsp Shaoxing wine. Lay ginger slices and scallion pieces on a plate, place the fish on top, and add more ginger on the fish. Steam over high heat for 10–12 minutes until the flesh flakes. Discard the cooked ginger and scallion, top with fresh scallion threads, ginger julienne and cilantro, and pour 1 tbsp light soy sauce over the fish. Heat 3 tbsp neutral oil until smoking and pour it over the aromatics. Serve immediately.
