**Recipe: Milky Prussian Carp and Tofu Soup**
**Ingredients:**
* 1 Prussian carp, approximately 2 lb
* 14 oz firm tofu, cut into cubes
* 5–6 slices fresh ginger
* 2 green onions
* 1 tablespoon cooking oil
* 6–7 cups boiling water
* Salt and white pepper to taste
* Napa cabbage or goji berries, optional
**Directions:**
1. Thaw the fish in the refrigerator. Scale, gut, remove the gills, and clean the fish if needed. Pat completely dry.
2. Heat the oil in a large pot. Pan-sear the fish over medium heat until lightly golden on both sides.
3. Add the ginger and boiling water. Boil uncovered for about 10 minutes, then reduce to a gentle simmer.
4. Simmer for 25–35 minutes. Add the tofu during the final 10–15 minutes.
5. Cook the fish to an internal temperature of 145°F (63°C), or until the flesh is opaque and separates easily.
6. Remove the fish carefully. Pour the soup through a fine-mesh strainer to remove small bones.
7. Return the strained broth and tofu to the pot. Season with salt and white pepper, then garnish with green onions.
**Serving Tip:** For the safest and easiest serving experience, enjoy the strained broth and tofu. If serving the fish meat, carefully remove every bone before eating.
