I am new to buying coconuts.... and seeing "white" is not the white UNDER the brown that they appear as in markets lol I actually tried eating the exterior for a minute and to convince myself it was just.... tough coconut I'm dumb sometimes you'll need a cleaver or some patience.... the white is the outside husk. But it does help preserve it longer. The one I experimented with dropped >12oz coconut water from inside though ..... consider what that costs in the store.....
