I bought three bags of Jerusalem artichokes to use in kinpira (a Japanese dish of stir-fried vegetables) which I keep frozen! I've repurchased them many times, and recently the tubers have been large and the freshness rate is high!!!

It is rich in inulin, dietary fiber, iron, and other minerals, and is primarily used to lower blood sugar, aid weight loss, promote bowel movements and detoxification, and reduce swelling and heat. It can regulate blood sugar in both directions, making it suitable for diabetic patients, and also has spleen-strengthening, stomach-regulating, and lipid-lowering effects.
It's a small bag, quite clean, and looks fresh. I'm planning to try making a cold dish with it.

Beautiful Jerusalem artichokes have arrived. Maybe they were on sale, but they're cheaper here than in Japan. I've eaten them raw, added them to stir-fries, and mixed them in salads. They're delicious.
