Chicharrón prensado: a flavor bomb If there's one ingredient that screams Mexican flavor, it's chicharrón prensado. Its flavor is intense, meaty, and full of umami, with that salty, smoky note that only fried pork can provide. When cooked in sauce, it transforms: it absorbs acidity, spiciness, and even a hint of sweetness, but never loses its robust essence. The serranos are on the left. You get plenty of them and I shared half with my neighbor. Seems only some of these peppers are hot this time.
